Lemon Garlic Coriander Rice
A delicious and aromatic rice dish that goes well with a variety of main dishes.
Ingredients
- 2 cups white rice
- 4 cups water
- 1 lemon, juiced and zested
- 4 cloves garlic, minced
- 1/4 cup fresh coriander, chopped
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Rinse the rice in a fine mesh strainer and add it to a pot with the water. Bring to a boil, then reduce heat to low and cover with a tight-fitting lid. Cook for 18-20 minutes, or until the water is absorbed and the rice is tender.
- While the rice is cooking, heat the olive oil in a pan over medium heat. Add the garlic and cook until fragrant, about 1-2 minutes.
- When the rice is done, fluff it with a fork and transfer it to a large bowl. Add the garlic, lemon juice and zest, and coriander, and stir well to combine. Season with salt and pepper to taste.
- Serve hot and enjoy!
