Low FODMAP Spinach and Feta Omelette

Ingredients:

  • 2 eggs
  • 1 tablespoon lactose-free milk
  • 1 tablespoon garlic-infused oil
  • 1 cup baby spinach leaves
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together the eggs and lactose-free milk. Season with salt and pepper to taste.
  2. Heat the garlic-infused oil in a non-stick skillet over medium heat.
  3. Add the spinach leaves to the skillet and cook for 1-2 minutes until wilted.
  4. Pour the egg mixture into the skillet, and tilt the skillet to spread the eggs evenly across the bottom.
  5. Use a spatula to lift the edges of the omelette and let any uncooked egg flow underneath.
  6. Once the omelette is almost set, sprinkle the crumbled feta cheese over one half of the omelette.
  7. Fold the other half of the omelette over the cheese, and cook for an additional 1-2 minutes until the cheese is melted and the eggs are cooked through.
  8. Serve hot, garnished with additional salt and pepper if desired.

Lemon Garlic Corriander Rice Recipe

Lemon Garlic Coriander Rice

A delicious and aromatic rice dish that goes well with a variety of main dishes.

Ingredients

  • 2 cups white rice
  • 4 cups water
  • 1 lemon, juiced and zested
  • 4 cloves garlic, minced
  • 1/4 cup fresh coriander, chopped
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Rinse the rice in a fine mesh strainer and add it to a pot with the water. Bring to a boil, then reduce heat to low and cover with a tight-fitting lid. Cook for 18-20 minutes, or until the water is absorbed and the rice is tender.
  2. While the rice is cooking, heat the olive oil in a pan over medium heat. Add the garlic and cook until fragrant, about 1-2 minutes.
  3. When the rice is done, fluff it with a fork and transfer it to a large bowl. Add the garlic, lemon juice and zest, and coriander, and stir well to combine. Season with salt and pepper to taste.
  4. Serve hot and enjoy!
